Potato, Bacon, and Leek Soup

Hey there!

Fall is just around the corner, so soup season is upon us! get your pots and soup bowls out because I am ready! If you're in the mood for something warm, hearty, and absolutely delicious, let me introduce you to these comfort foods: potato, bacon, and leek soup. It’s creamy, savory, and packed with flavor. Plus, it’s super easy to whip up on a chilly day!



Fresh leeks from the garden can you say more? I mean anything homegrown makes everything so much better. It's a proven fact with everyone right?


Ingredients You'll Need:

  • Potatoes (for this one I used just Russet)

  • Leeks

  • Bacon (crispy bacon is the secret to life, right?)

  • Garlic

  • Celery

  • herbs

  • Chicken broth

  • Heavy cream (for that luscious texture)

  • Salt, pepper, and and spices


How to Make It:

  1. Start with the Bacon: Cook up some bacon until it’s crispy and delicious.

  2. Sauté the Leeks and Garlic: In the same pan (with the bacon fat and bacon), sauté sliced leeks, garlic, herbs, and celery until they’re soft and fragrant. The leeks add such a lovely, mild onion flavor that pairs perfectly with the bacon and potatoes.

  3. Create a Rue: Create a rue with all the bacon grease this will create amazing flavor. Add the flour and stir it all together. Then add in your chicken broth.

  4. Cook the Potatoes: Toss in your diced potatoes. Bring it all to a simmer and cook until the potatoes are soft and tender. The smell at this point? Amazing!

  5. Top with Bacon: Crumble the crispy bacon on top of your soup. Trust me, this final step takes the soup to the next level.

It’s just pure comfort in a bowl. The combination of creamy potatoes, smoky bacon, and the delicate flavor of leeks is everything you want on a cozy night in. Plus, it’s one of those soups that tastes even better the next day, so leftovers are a win.
